  • Detection of allergens in processed foods

We have developed RT-PCR-based methods to detect the presence of hidden traces of allergens in processed foods. For this purpose, it is necessary to determine the effect of food processing technology on the detection of target sequences. This work is carried out in collaboration with the Group of Dr. Carmen Cuadrado (Department of Food Technology, INIA).

 

  • Development of genosensors

We are interested in the development of electrochemical biosensors capable of being used as tools for the detection of undeclared species in food. To this end, we identify specific DNA sequences of certain food-interesting species that are used as probes in biosensors. This work is carried out in collaboration with the Electroanalysis and Electrochemical Biosensors Group led by Prof. José Manuel Pingarrón (Faculty of Chemical Sciences, Complutense University of Madrid).
